Chef Matthew Fitzgerald heads up the team producing a menu that will serve to re-define Mexican cuisine as we know it. Inspired by the barren, yet culturally rich South-west region of Oaxaca (Wahaca) Fitzgerald has assembled a team and menu to tickle your tastebuds.
Complimenting this we have one of Australias best bar teams - Luke Redington (Eau de vie/Bar Manager of the Year), Tim Phillips (Hemmesphere/World Class Bartender of the Year) & Connor Sainsbury-Canham (The Spire Hotel, NZ)
